Hazard Analysis and Critical Control Points (HACCP)

Participants will learn about prerequisite programs and the seven steps of HACCP. This curriculum is approved by the HACCP Alliance and follows the guidance document from the National Advisory Committee on the Microbiological Criteria for Foods (NACMCF). Offered in English and Spanish.
AI For Food Safety

This workshop provides participants with the knowledge and practical experience to effectively use Artificial Intelligence (AI) tools to develop key components of a food safety management system, including Standard Operating Procedures (SOPs), policies, training materials, and system verification activities. The course addresses the responsible and ethical use of AI and how these tools can improve efficiency, standardization, and accessibility while maintaining compliance with food safety regulations and audit standards.

The new improved Version 2.0 of the PCHF curriculum integrates information from the FDA's recently issued Hazard Analysis and Risk-Based Preventive Controls for Human Food draft guidance, including updates to the hazard analysis course chapter, which now includes use of the FDA’s Appendix 1.
Fluid Milk Processing for Quality and Safety
